Title: Apple Soup with Spiced Croutons

2 1/2lbTart apples
1smOnion, chopped
5cChicken broth
1cApple juice or cider
1tbGrated lemon peel
1/4cLemon juice
1tsCoriander seed
  Thin apple sliced, optional
  Spiced croutons (recipe follows)

Peel, core, anc coarsely chop whole apples. In a 5 to 6 quart pan, combine chopped apples, onion, broth, apple juice, lemon peel, lemon juice and coriander. Cover and bring to a boil over high heat. Simmer gently until apples are soft enough to mash easily, about 30 minutes. If making ahead, cool, cover and chill up to 2 days.

Smoothly puree apples mixture, a portion at a time, in a blender or food processor. Return to pan and stir often on high heat until steaming, 3 to 4 minutes (6 to 8 minutes if chilled). Ladle soup into bowls. Garnish with apple slices and add croutons to taste.

Spiced croutons: Cut half of a 1/2 lb baguette crosswise into 20 equally thick slices. Arrange slices on a 12"x15" baking sheet. Evenly brush 1 tb melted butter or margarine onto top of slice. Dust lightly with a mixture of 1/2 ts ground cinnamon and 1/4 ts ground nutmeg. Bake at 300øF until lightly browned, about 20 minutes. Serve warm or cool. Wrap cool croutons airtight and hold at room temperature up to 2 days.
